Yaletown’s Best Brunch at glowbal grill | Blueberry French Toast

glowbal grill’s Blueberry French Toast (Serves 4)

What You Will Need
4 slices brioche bread 1.5 inch thick
2 tbsp blueberry compote
4 strawberries quartered
12 raspberries
2 tbsp  whipped cream
2 tbsp butter
4 eggs
¼ cup cream
1 tsp cinnamon
½ tsp nutmeg

And for the Blueberry Compote
1 cup frozen blueberries
¼ cup sugar
½ cup water

Method
For the Blueberry Compote: place blueberries, sugar and water into a sauce pot and bring to boil. Cook 4-5 mins until sugar has dissolved and blueberries are cooked but still hold there shape. Cool in fridge and reserve for later.

For the French Toast: combine eggs, cinnamon, cream & nutmeg and whisk to combine. Pre heat a pan on the stove. Soak brioche slices in egg mixture 1-2 min until bread has absorbed some of the mixture and  is fully coated.

Add butter to pan. Once melted add brioche slices and cook until golden brown and hot in the middle. Once cooked, cut each slice, angle and place on plate. Top with blueberry compote and whipped cream.  Garnish with fresh berries and dust with powdered sugar.  ENJOY!
