A Glowbal Collection Recipe: Dark Chocolate Pistachio Biscotti

Looking to leave a lasting impression on your guests with the upcoming holiday season? These little guys should do the trick-I know I’d be impressed if someone served me a homemade dark chocolate biscotti along side my after dinner *spiked* coffee.

What you’ll need:

1 lb room temperature butter

3 cups sugar

1 tbsp vanilla extract

8 eggs

2 lbs flour (more if needed)

3/4 cup roughly chopped pistachios

2 cups dark chocolate callets

3/4 cup sifted cocoa powder

5 tsps baking powder

 

Method:

1. Cream butter and sugar together until light and fluffy

2. Pour in vanillla and beat in the eggs one at a time until fully incorporated

3. Add the flour, baking powder and sifted cocoa powder and mix until combined

4. Add in the pistachios and chocolate callets

5. Divide the dough into 4 logs

6. Bake at 375 for 25-30 min

7. Let cool on tray and then slice into long diagonal cookies

8. Complete by allowing the long cookies to dry in a 200 degree oven for 45-55 min
