A Glowbal Collection Recipe | Linguine Carbonara

Step 1: Liaison

230ml whipping cream
3 egg yolks

Liaison Method

First beat your egg yolks and heavy cream together in a separate bowl. Set aside to be added to your pasta sauce. The liaison will slightly thicken a sauce, but it’s biggest contribution is adding a richness to your sauce.

Step 2: Linguine Carbonara

800g cooked linguine
0.5lb diced pancetta
4tbsp sliced green onion
8tbsp grated parmesean
4tsp chopped shallot
2tsp chopped garlic

Linguine Carbonara Method

In a sauté pan with a touch of olive oil, cook the pancetta until fairly crispy. Add the onion, shallot, and garlic. Saute until golden brown.  Then warm linguini noodles in water. Remove the pan from the heat and add the liason with a tad of the pasta water. Stir constantly, add pasta, and parmesean. Toss until completely mixed. If it seems thick, add a little more pasta water. Finish with a little pinch of cracked pepper and sliced green onions.
