Cocktail: Modena Caipirissima

1 oz Bacardi White
¾ oz Strawberry Compote (sweetened / housemade) | substitute: 1 heaping teaspoon sweetened strawberry jam
Drizzle of Crema di Balsamico (by Italissima, available at A. Bosa in 500ml bottles)
2 Basil Leaves & 1 Fresh Basil Sprig
2 Wedges fresh lime & 1 Lime wheel
½ oz Simple Syrup (50:50 by volume supersaturated sugar and hot water solution, cooled)
Bar shaker glass & metal shaker tin

Double Rocks glass
In a clean shaker glass add basil leaves & 2 wedges of lime. Muddle lightly without breaking up basil too much. Add rum, strawberry compote, simple syrup & a drizzle of balsamic cream. Top shaker glass with cubed ice and apply shaker tin on top ensuring a good seal. Vigorously shake the mixture. Remove the shaker glass by tapping lightly where the glass and metal join with the heel of your palm. Strain the mixture into a double rocks glass filled ¾ full of ice. Top up with a splash of club soda. Apply straw and garnish with a lime wheel and sprig of basil to one side of the glass. Finish with a drizzle of balsamic cream over top, partially over lime wheel and drink.
