A Glowbal Collection Recipe: COAST Crab Cake

Looking to make your own West Coast dinner tonight? People come from all over the lower mainland to indudge in COAST’s original crab cakes with a side fennel salad and homemade tartar sauce, and now you can try it in your kitchen at home. (Serves 4)
What you’ll need for the Crab Cakes:
1lbs Dungeness Crab
½ cup mayonnaise
½ cup celery, diced
1 tbsp thyme, chopped
½ cup panko bread crumbs
Method
Place all ingredients, excluding the panko bread crumbs, into a stainless steel bowl and mix together remembering to season generously with salt and pepper.
Place mix into stainless steel ring molds and pre-heat oven to 375 degrees.
On a plate spread the panko out evenly, generously covering both sides of the crab cake.
On medium heat, place a frying pan with 10ml of canola oil.
Once it has reached the smoking point, place crab cake into the pan, presentation side down until it starts to brown.
Flip crab cake over and place in pre-heated oven for approximately 4 minutes.
Remove crab cake from the oven carefully and place on plate.
Use a spoon and tap side of the ring mold until crab cake is released.
Serve with a small fennel salad, and top with 1/2 tsp of tartar sauce.
What you’ll need for the Fennel Salad:
1 medium head fennel, shaved
1 cup Mesclun mix
1 head frisée
½ cup orange vinaigrette
4 fennel sprigs
Method
Mix ingredients together.
What you’ll need for the Tartar Sauce:
½ cup mayonnaise
1 chopped shallot
1 tbsp chopped gherkins
1 tbsp chopped capers
1 tbsp chopped chives
1 tbsp lemon juice
Touch of lemon zest
Method
Ensure everything that needs chopping is finely chopped.
Put all ingredients into one bowl and mix together.
Add salt and pepper to taste.
Chill before serving.
When you have completed all of the above steps, you are ready to serve and enjoy!
