Welcoming the new Executive Chef at COAST and this week’s Glowbalite-Eric Pless! A native of Ontario’s wine region, Chef Eric enrolled in the Culinary Arts Program at Niagara College in 1995, embarking on a richly rewarding and diverse career, taking him across Canada and into the UK. With his knowledge, years of professional experience and the utmost appreciation for food and wine integrity, Eric is ideally-suited for Glowbal’s high-energy offer of vibe dining at its finest.

Where did you grow up?
Niagara Falls, Ontario
What inspired you or how did you start in the hospitality business?
Inspiration came from my Grandmother’s love of food. How did I start? As a dishwasher like most others.
Give a brief outline of your work history and accomplishments.
Being a native of Niagara I’ve worked in almost all of the regions in both wineries and restaurants. I spent 3 months on stage at the Fat Duck in England, and most recently have relocated from the Distillery District in Toronto.
What’s your favorite part of the restaurant business?
Seeing an empty plate, a happy guest and all of the energy that brings.
Do you have a favorite GRG location? Why?
They all have a separate, vibrant energy. So I like them all equally.
Other than the restaurant business, what jobs or careers have you held?
I have worked in construction as well as fire restoration.
If you weren’t in this business, what would you be doing?
I would be involved with architecture, industrial design, environmental engineering or fire fighting.
If you could live anywhere else in the world where would it be?
Show me a map and I’ll throw a dart.
What band(s) are played most on your ipod right now?
Beastie Boys, Led Zepplin, Tool, and Paul Simon.
If you could have dinner with anyone dead or alive, who would it be?
My family and friends and maybe Elvis.
As a kid, what did you want to be when you “grew up”?
You name it I wanted to be it, but I think fire fighter was tops.
