I would suggest flaming your citrus zest from approximately 6 inches away from the surface of the cocktail at a 45 degree angle to reduce the agressive burnt oil from landing on the drink. Oil does not caramelize, it burns, and when flaming a citrus zest, it will leave an unpleasant aroma if a great deal of that oil lands on the fragrant cocktail. Please don’t just take my word for it, try it both ways and decide for yourself which one has the more pleasant aroma.
Cheers!
